The Spray Dryer in Food Industry operates by drawing air through a filter and heating unit into the hot air distributor at the top of the drying chamber; the hot air enters the chamber evenly and flows in a spiral pattern. Simultaneously, the feed liquid is delivered to a centrifugal atomizer mounted at the top of the chamber, where it is sprayed into fine droplets, vastly increasing the contact surface area between the liquid and the hot air. Moisture evaporates rapidly, resulting in a dried product within a very short time. Coarser product particles are collected in a container at the bottom of the dryer, while exhaust air is discharged by a centrifugal fan.
